Try this simple squash recipe instead of sweet potatoes this year on your holiday table. Ingredients 1 butternut squash, peeled, seeded and cubed1/2 c. fat-free sour cream1/2 c. onion, finely chopped1 egg, lightly beaten1 t. brown sugar1/4 c. whole grain saltine crackers, crushed2 T. Parmesan cheese, grated1 T. reduced-fat butter, meltedsalt & pepper to taste Directions Preheat oven to 350 degrees. In a large pot, bring the squash to boil. Reduce to simmer until the squash is soft.
