It started with a stroke of luck, a closed restaurant and an idea. As Jen and Josh Hullett drove down 171st Street in Tinley Park, they noticed a longtime greasy spoon called Jr’s Hot Dogs had closed. Jen, a lifelong Tinley resident, used to work next door as a hairdresser, before “dabbling in a little bit of everything” and eventually owning a transportation company with her husband.She turned to Josh.“We should open a hot dog shop,” she said.He was quiet.
